Risotto with Trentino Sausage and Garden Zucchini (courgettes)
Risotto with Trentino Sausage (“salsiza”)
Are you ready to steal the secrets of our chef Adriano? Today he prepares this famous dish for us!
You are hungry??? Let’s start with the basics of Trento province cuisine.
Do you know the Trentino “salsiza”(sausage)? No?!?! It’s typical, sold raw, and made with pork, veal, and the addition of bacon.
Ingredients for 4 portions:
350 grams of carnaroli rice
2 large zuchinni
2 Trentino sausages
Extra virgin olive oil
1lt Mixed meat broth
1 glass of red wine
Salt and pepper
Cut the onion and zucchini while heating the broth, which must always be hot but not boiling
Toast the rice in a non-stick pan for 5 minutes over medium heat, without anything other than rice in the pan, then take the rice out of the pan and set it aside.
Cut the sausage, and heat a little oil in the pan in which you toasted the rice (the pan must be low and wide because we will cook the rice in it), fry the onion, add the zucchini together with the sausage and let it cook for 10 minutes.
Add the rice and blend with the glass of wine, then add half the broth, mix and add a little salt. When the rice begins to dry, add the other half of the broth. The total cooking time will be about 15-16 minutes, then turn off the flame, add grated cheese, parsley, pepper and olive oil.
Mix well and cover the pan for 5 minutes.
Serve the risotto and enjoy it.
